Who else hates food waste?
Well I especially do, which is why I always make an effort in creating recipes that use up whole packages of produce or in this example - whole eggs.
I was preparing a cake for my son’s first birthday, wanting to do a simple, layered sponge cake with vanilla cream in between and topped with fresh fruit. But as I was making the Vanilla Bean Pudding, needing 6 egg yolks, I quickly changed plans when looking at the 6 leftover egg whites.
So I made these super cute (and surprisingly easy) mini pavlova to scoop the vanilla pudding into.
